This butter cookie recipe was born out of one of those spontaneous afternoon baking sessions during the COVID lockdown, when I was itching to try something new in the kitchen. I had never baked cookies before, so I looked up a basic, no-fuss recipe online and gave it a go. To my delight (and the kids’!), it turned out to be an instant hit.

 

Over time, it’s become one of our favorite quick bakes: simple, tasty, and super versatile. I’ve had fun experimenting with different shapes and toppings: cookie cutters, chocolate chips, tutti frutti, and sprinkles, you name it. These cookies are buttery, slightly crisp at the edges, and full of flavor. Just mind the calories, they’re hard to resist once you start!

    These classic butter cookies come together with just a few pantry staples and a little patience (mainly for the chilling time). The dough is simple to work with, and you can shape them by hand or with a piping gun for that perfect bakery-style swirl.

    Step1

    Cream the butter and sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy.

    Add eggs and vanilla: Beat in the eggs and vanilla essence until the mixture is smooth and fully incorporated.

    Mix in dry ingredients: Sift the flour and salt into the bowl. Mix until a smooth, even dough forms (do not overwork it).

    Chill the dough: Cover and chill the dough in the refrigerator for at least 1 hour. Chill the baking tray as well for best results.
